2012 Single Vineyard Estate Cabernet Sauvignon
Deep purple red colour, the nose is aromatic and lifted with a briar-like quality. The palate is structured and tight but with no meanness or austerity. There is great length of flavour with a nice structured finish and a spade of good natural grape tannins to boot.
The 2012 growing season was dominated by a succession of warm fronts which swept over the southwest in the new year, however, some good spring rains left the soil moistures sufficient to carry through and in the end a great year for reds, born out by proof in the bottle.
Northern Margaret River, we’ve taken this fruit for some time, hand picked from a lyre trellis, a rarity these days.
Open fermenters plunged twice daily and irrigated in between times. Run off to barrels at dryness and matured quietly for twelve months before further bottle maturation prior to release.
